3. Masterful Skill to Keep Onomichi Tradition
On December 20, 1936, a photo of a “Yatai”(food stall) appeared in Osaka Mainichi Shinbun Newspaper with an article introducing a man named Shoichi and his tasty noodles Onomichi. Shoichi was the first man to cook Ramen in Onomichi. Currently his grandson, Mr. Chikara Ikenaga continues to keep the tradition going.

To make noodles, Chinese noodles in Japan tends to have higher ratio of water to flour. This makes it smooth on the surface, but the flour flavor gets weaker. Also, one does not need to use high quality flour, and the amount of flour is saved, leading to lower cost of production. At Ginkgoya Onomichi Ramen, we use only the best quality flour, adding minimum amount of water to realize the distinct flour flavor of ramen noodles. True to our name “Ganko” (strong commitment) we stick to the true tradition of Japanese ramen noodles with distinct flour flavor, using best flour and minimum added water despite the higher cost to make them.
5. Commitment to Soup
Thick “Shoyu”(soy sauce) soup is the foundation of Onomichi Ramen. It is thick in appearance, but it is never salty. With the lard from pork’s back (Se-abura), soy sauce makes an exquisite balance with soup stock from kelp and small fish of Setonaikai Sea.
6. Commitment to Sanitation
Daily control of temperature, humidity and sanitation is done with closest attention.
